The Latest Science About Glyphosate + My New Favorite 1-Ingredient Salad Upgrade
Check out 35 brand-new stories and tour Houston and Northern Arizona with me!
Happy Monday, happy spring and welcome back to What’s Good!
I appreciate your patience with my one week delay amidst my travel-rich March. My story idea spreadsheet is looking robust, my cup is full and my bed is feeling great after a couple weeks of adventures sprinkled in.
First up, I enjoyed eating, exploring and rodeo-ing my way through Space City with Visit Houston. What an eclectic, diverse and fascinating city! I’ll have more stories inspired by this experience coming soon, but I can’t leave you hanging…
If you’re planning to be in the area soon, you can’t go wrong by resting your head at artsy Hotel Saint Augustine or the opulent Post Oak Hotel (which took home one of the first Michelin Keys in America). For a very apt souvenir that you’ll actually use, I highly recommend swinging over to Magnolia Mercantile to make a custom cowboy hat. Then refuel between it all at any or all of these culinary highlights:
Brunch at Dandelion Cafe, a casual and comforting husband-wife bistro with pastries, breakfast tacos and award-winning chicken and waffles.
Dinner at JŪN, a tasting menu restaurant that celebrates El Salvadorian, Mexican and Chinese cuisine, all dreamed up by two Top Chef competitors.
Dessert and drinks at Case Chocolates, an intimate, 20-seat speakeasy that pairs N/A or spirited sips with filled chocolates from around the world.

After a week of work, workouts, non-profit meetings and catching up with friends back in Central Iowa, Dad and I jetted down to Page, Arizona for an adventure I’ll never forget. Remember when I took Mom on vacation to Southall Farm & Inn in Franklin, Tennessee last summer? This year, it was Dad’s turn, and he selected this picturesque portion of Northern Arizona to hike and tap into the photography skills he’s honed during retirement.
The views were breathtaking, the conversations were unforgettable and the entire long weekend was priceless. From chatting about the challenges of his career while chowing down on cornbread muffins at Big John’s Texas Barbecue to giggling as we hustled to beat the camera timer so we could have a photo together inside Antelope Canyon, I’ll relish these moments and memories forever. It was such a joy to see my Dad channel his creative side—and to have the privilege of seeing him conquer challenging hikes with ease while getting to know him better than ever before. What a gift!
For stunning snapshots of our trip, as well as wildlife and scenery from Iowa and beyond, you can follow my Dad on Instagram at @r.walsh57 or check out his blog here.

What to Read…
Before, during and after those excursions, I’ve been busy reporting and writing about a wide range of topics, from a controversial pesticide to chic home design ideas to my new favorite salad topping. (I highly recommend taking a break from croutons and trying crispy rice instead!)
Since this round-up is jam-packed with 35 new stories, I’ll keep my recap and the rest of this edition brief so you can poke around and peruse anything that catches your eye.
If you only have time to read one, I’d highly recommend checking out this first piece, a highly-researched deep-dive that shares everything you need to know about glyphosate (the pesticide commonly known as Roundup). The headlines around this topic can be sensational, but here’s what we know now: This is one situation in which the dose makes the poison. Although the use of glyphosate has risen rapidly in the past 30 years, our “dose” is very, very far below what scientists deem to be dangerous. (For perspective, a 150-pound person would need to eat 82 boxes of Cheerios per day to exceed the acceptable daily limit set by the U.S. Environmental Protection Agency.)
Have a few extra moments? Dive into the ChatGPT meal planning piece. While AI isn’t the perfect “easy button” to make a week of meals a reality, it can certainly come in handy in many ways. The retailer-specific shopping list and cost estimate blew me away!

One Good Thing to Go…
I’m delighted to start a new feature this week, which I’ll plan to add to the end of each What’s Good moving forward. Think of. “One Good Thing to Go” as a goody bag; your takeaway to enjoy later. In future weeks, this might be one person to follow on social media, one product I’ve bought and loved, one poem to read or one question to consider.
Today, I’ll leave you with this week’s Wait Wait…Don’t Tell Me podcast, which is not only laugh-out-loud funny, but also includes a cameo by my dear friend Jason! Listen for him around the 14-minute mark playing the “Bluff the Listener” game.
Another great edition with so many great articles, Karla!
